Banana Blueberry Cake

 Ingredients:

  • 1 cup mashed banana (around 3 small, or 2 large bananas) 
  • 125g butter 
  • 1 teaspoon vanilla essence 
  • 1 cup castor sugar 
  • 2 eggs, lightly beaten 
  • 1/2 cup blueberries 
  • 1/3 cup sour cream or thick yoghurt  
  • 2 cups self-raising flour 

 Directions: 

  1. Place butter, vanilla and sugar in a bowl and beat until light and creamy. Add eggs and beat well.
  2. Fold through flour, sour cream, banana and finally blueberries.
  3. Spoon mixture into a greased 22cm round cake tin and bake in a preheated 180°C oven for 1 hour and 10 minutes (or until cooked when tested with a skewer).
  4. Allow to cool in tin before turning out to serve.
