Place egg yolks and sugar in a bowl and beat until thick and pale. Fold through banana and nutmeg. Place egg whites in a separate bowl and beat only until soft peaks form. Gradually add sugar and beat until egg whites are thick and glossy.
Fold carefully through banana mixture and spoon into ramekins.
Bake in oven pre-heated to 200°C for 15 to 20 minutes or until puffed and golden.
